Equipment

  • Wood chips or chunks
  • 1 Aluminum foil
  • 1 Grill tongs
  • 1 Grill brush

  • 1 Sharp knife or kitchen shears

Ingredients
  

  • 2 racks Baby back ribs.
  • 1/4 cup brown sugar
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp black pepper
  • 1 tbsp salt
  • 1 cup honey bourbon
  • 1 tbsp lemon pepper
  • 2 tbsp paprika

BBQ Sauce:

  • 1/4 cup honey
  • 2 tsp apple cider vinegar

Instructions
 

  • Preheat your smoker to 225°F (107°C) and get ready for indirect smoking.
  • In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, chili powder, cumin, black pepper, lemon pepper, and salt to make a dry rub.
  • Remove the membrane from the rear of the ribs and trim away any excess fat. Using paper towels, dry the ribs thoroughly.
  • The dry rub should be generously applied on both sides of the ribs, massaged into the meat.
  • Once the smoker is heated, place the ribs bone-side down on the grate. To add smoke flavor, place the wet wood chips in the smoker box or directly on the coals.
  • Close the smoker and let the ribs to smoke for 3-4 hours, or until the flesh is soft and peels away from the bones without coming off.
  • In a small saucepan, mix together the honey bourbon BBQ sauce, honey, and apple cider vinegar. Warm the sauce over low heat, stirring occasionally, until it is thoroughly cooked.
  • Brush the ribs generously with the honey bourbon BBQ sauce mixture every 10 minutes for the final 30 minutes of smoking, creating a sticky coating.
  • After the ribs have finished cooking, remove them from the smoker and allow them to rest for 10 minutes before slicing between the bones.
